I use any kind of hot peppers that the store has and we usually have a nice choice of fresh and dried chiles. I don't worry about the mesquite ash. If I'm cooking this on mesquite coals the ash takes care of itself. Some folks around here think the best fire is made with cow chips. In a pinch my propane fired stove does pretty good too. I use Texas 1051 onions when they are in season. Usually they are so big that one will do. I don't really measure when I cook chile, but I taste a lot. If the peppers are hot it helps to have a can of beer handy. After awhile if you drink enough beer you won't care what the chili tastes like.
