My favorite zucchini recipe  (NO Laura, I don't need any zucchini)  is:
Stir-Fried Zucchini with Shrimp
Printer version of this recipe

Fry some (lots) sliced onions long enough so they get REALLY brown.

Stir in some sliced zucchini and cook until its almost done.

Toss in some shrimp and cook only until it turns pink.

Season with Lemon Pepper and dump it on some rice.

One of the easiest summer recipes I know - it only needs to be watched during the shrimp phase.
