spacer Wive's Chowder

I didn't win but had the satisfaction that my chowder was the first one empty, we all brought 4qts. So there! But as requested here's the recipe:

Wive's Chowder (I doubled it but I don't think you want 5-qts+)

2c. clam broth
8c. cream (I used half and half)
1/2 lb. butter (I used real)
5 oz. scallops
6 oz. crabmeat
5 oz. haddock, cod, or hake fillet (I used hake, cheaper & firmer)
4 oz. shrimp (I couldn't find fresh uncooked, so used clams)

Melt butter in a deep pan, add seafood and cook until fish is done. Add clam broth and cream simmer until piping hot.

That's it easy, easy, easy. I did cook the scallops, which I chose to cut into thirds, and hake, cut into same size, for a bit before putting the others in as they take longer to cook. But you could just as easily substitute mussels, oysters even lobster.

It just depends on what's fresh and affordable. The freshest, ie not previously frozen, will make the best of what ever you are making.

I used several recipes in the best seafood cookbook ever written as a base for my chowder. -Maine Fisherman's Wives Association Seafood Cookbook Volume 1- far as I know there is no volume 2. But there are recipes for everything that can be caught here.
