Chili - The Threads

Veggie Chili

1 cup Pinto beans
3 T. butter
1/2 tsp. turmeric
1 tsp. ground cumin
1 tsp. cumin seed
1 tsp. ground coriander
1 large onion, chopped
3 1/2 cups boiling water
1/2 tsp. vegetable seasoning
1 tsp. salt
1/8 tsp. red pepper and cayenne
1/2 tsp chili powder
1/2 pound mushrooms, chopped and sauteed
4 fresh tomatoes peeled and cubed
1 green pepper diced and simmered until soft

Soak beans overnight in boiling water.
In large pot add butter and first four spices.
Let spices brown then add onion, drained beans and boiling water.
Cover and simmer 3 - 4 hours.
Then add the rest of the ingredients.
Heat and serve with a tossed salad
