Paul Chiasson writes, of turkey gravy: > spiced, and mushrooms, onions, and some worcestershire or soya sauce (take your pick as long as it's dark) added for colour.

Don't need that.
Simmer your turkey or chicken stock with some of the yellow outside peel of onions.
Does a wonderful job of adding colour (works for beef broth, too).
