spacer Indian Turkey Curry

Indian Turkey Curry
(great for left over turkey and chicken - though i do crazy things like buy a rotisserie cooked chicken at the grocery store and pull off all the meat to make this)
Printer version of this recipe

6 tblspns butter (or less, if you want to make a "low-fat" variety)
1 tblspn curry
1 cup chopped onion
1 1/2 tblspn flour
1 1/2 cups chicken broth (or water and boullion)
2 1/2 cups cooked and diced tukey or chicken
1 teaspoon grated lemon rind (or a squeeze of juice) - (optional - and i don't usually do this part)

melt butter, add curry and cook 2-3 minutes;
add onion and cook until soft, stirring often -
sprinkle flour and continue cooking, sitrring often for another 2 minutes -
add boullion - bring to a boil then simmer 10 minutes -
add turkey and simmer for 15 minutes.

add a bit of lemon, if desired.

serve over uncle ben's long grain and wild rice with cranberry sauce on the side.

by the way, there are tons of different kinds of curry powders and curry pastes as well, to make this taste really good make sure you pick a curry that's not too strong for your individual taste. if you want to get really complicated you can create your own curry, but i don't bother.
