spacer Tomato Salad

This was the weekend of the parish picnics. We had one on Saturday and one on Sunday. I cheated and threw together a tomato salad, divided it in two and brought one to each picnic.

Tomato Salad
Printer version of this recipe

Tomatoes,
onions,
oregano,
vinegar,
olive oil
and some little teeny balls of mozzarella.

>This sounds great, Roy. I think I will keep it in my "church pot luck" files.
Do you assemble this salad the night before?

It needs at least 4 hours of sitting.
But the night before works just as well.
I did cut the fresh mozzarella balls (which were about an inch in diameter) into quarters.
