Oh, Eric--please share the recipe! I love sweet potatoes all year round and am always interested in non-sugary ways to fix them!

Sweet Potatoes with Parmesan

Take a bunch of sweet potatoes ...
this year we made two big casseroles of this dish using two pounds of potatoes, two 8 oz bricks of cheese (one romano, one parmesan) and a pound of butter (the real stuff, not margarine) ...

So, I guess for one dish you'll need a lb. of sweet potatoes, 8 oz of grated cheese (either or both, your choice) and a 1/2 lb of butter.

Peel the potatoes and slice them into 1/8 inch slices.
Finely grate and mix the cheeses.
Melt the butter.

Create a layer of sweet potato slices, overlapping them, in your casserole dish.
Sprinkle with 2-3 tablespoons of grated cheese and dribble 2-3 tbsp of melted butter over that.
On top of this, create another layer of slices, another 2-3 tbsp of cheese, another 2-3 tbsp of butter

... keep doing this until the casserole dish is full and you've used up cheese and butter....

Cover. Microwave on high for 20 min.
Then uncover and stick into a 400 deg. oven until the top layer is browned and the whole thing is bubbly hot.

That's it. (By the way ... this came out of a November Gourmet magazine about 15 years ago.)
