Cindy, I can get the recipe from my mother, but it's very popular and even people who aren't eating healthy seem to like it. she makes it more commonly in the springtime, though.

Strawberry Chiffon Pie

It's a strawberry chiffon pie. (Come to think of it, I wonder if you could do the same thing with canned pumpkin, hmm.)

She takes a cooked pie crust of sometime (she actually prefers graham cracker crust for this pie), and makes a filling of low-fat coolwhip that has partially-chilled-until-thickened-but-not-solid sugar free strawberry jello, folded together until it's pink (sometimes has a few bits of congealed jello in it, but that's okay) and some sliced strawberries.

That's all there is to it, but it's tasty.
