The Altar Guild of St. Jame's Church in Alexandria, LA made these wafers for the 1988 General Convention.

1 cup Milk
1/2 cup Honey or Cane Syrup
2 sticks Butter
3 cups Unbleached Flour
2 cups Whole Wheat Flour

Combine milk, honey and butter in heavy saucepan; heat until smooth.
Add the liquid to the combined flours, knead lightly, place in plastic bag.

Pull off small amounts, press flat with hands in white flour and run through a hand-operated pasta machine: first on widest setting, next on middle setting and last on narrowest setting.

Place sheets on ungreased baking pans.
Warm in 350° oven for 30 seconds;
remove and impress (not cut!) Circles with cutter;
Bake until lightly browned, approximately 5 to 7 minutes (until crisp to touch).

Remove, cool on counter, punch out.
Store in freezer bags in freezer.
Vary cutters for desired sizes of wafers.
