I haven't made stuffed mushrooms for a while, but I've broiled or baked them stuffed with bread crumbs, melted butter, parmesan cheese, minced garlic ... maybe brush the mushrooms first w/melted butter or olive oil. A good sign is when the filling tastes good enough to eat straight, before cooking ...
