St Francis' Communion Bread

I promised to post this recipe, so here it is.

Pre-prep:
Preheat oven to 350 degrees
Cover cookie sheet with baking parchment

Ingredients:
5 Cups whole wheet flour
3 Cups white bread flour
1/4 tsp salt
2/3 Cup powdered milk
1/2 Cup honey + a large dollop
1/2 Cup virgin olive oil + a large dollop
2 Cups water
1 whole egg
1/2 tsp dry yeast

Put small amount (2 tbsp) warm water and yeast in a bowl, set aside
Combine honey, olive oil and water. Warm on stovetop or in microwave
Combine 2/3 Cup powdered milk, 3 Cups white bread flour and 5 Cups wheat flour and mix well
Combine liquid mixture and yeast in a large bowl.
Add egg, lightly beaten
Add salt
Stir in flour/powdered milk mixture 2 Cups at a time
When dry enough to handle, knead in remaing flour to achieve an un-sticky dough

Roll 1/4" thick
Cut into rounds.
A large coffee can and a Planter's peanut can make rounds of the perfect sizes -- a large loaf serves about 40-50 persons; a small, one about 20-25.
Use the cans like cookie cutters.

Score the rounds with a cross from edge to edge -- just score them -- don't cut through!

Bake 12 min. Flip them over. Bake another 5 min. DO NOT OVER BAKE.
No browning or brown spots -- shorten baking time (both sides) if browing occurs.

Cool on racks or on brown paper bags for 10 minutes.
Wrap tightly in foil and freeze. Thaw overnight before use.
(Don't try to thaw in a microwave oven -- the rounds will overcook and turn hard as a rock!)

This recipe makes approximately 6 large and 24 small rounds, which is just right for our small congregation. It lasts us six weeks doing 2 services on Sunday (a small round at the early service, a large and a small at the later) and one on Wednesday evening (using a small round) with the occasional other service sometime during that time span.

By the way ... these are delicious right out of the oven spread with butter ... but that's not really what they're for, is it?

ADDENDUM:
I used this recipe for the first time in a long time just last evening (I was teaching two new Sacristans how to make communion bread) and discovered that it's not clear from the recipe that the 8 cups listed are not the full amount of flour.... you have to knead in another couple of cups until you have a non-sticky, medium stiff dough. Also, I have found that it helps to wrap the dough after kneading in plastic wrap and let it rest about 15 min before rolling it out to cut the rounds.
