Spinach Salad with Bacon Dressing - Gillian's

Brian's spinach salad recipe reminded me of my mom's. As best I can reconstruct it from her notes and my memory:

dressing:

a day ahead mix thoroughly together and refrigerate in a sealed glass jar:
1/3 C sugar
1 C Crisco oil
1/3 C tarragon vinegar
1/2 tsp salt
1/2 tsp pepper
1 med onion chopped *really* fine
3 tsp dijon mustard
1 tsp celery seed

salad:

1 bag spinach (washed and dried)
6-8 pieces bacon (cooked)
1/4 bag Pepperidge Farm stuffing mix
3 hard boiled eggs (sliced)
1 large sweet red onion sliced

To serve, toss dry ingredients in large bowl, shake jar of dressing vigorously and then pour over salad.
