spacer Sour Milk, Uses of

Thanks to being ill for so long I have a Considerable Quantity of sour milk. Almost a gallon and i hate to throw it away.

So I was wondering.. What are some of your tried and true favorite things to do with sour milk.

Makes great bread, as a substitute for buttermilk. Pancakes, too. Dumplings, anyone?

Unfortunately none of this is probably good for a diabetic. But bread you can give away (and it will be appreciated!)

Mimi:

You can use sour milk in (almost) any recipe that calls for sweet milk. Any recipe that can handle an extra tang.

Think:
Breads, waffles, cakes - especially chocolate
Creamed or scalloped veggies
Casseroles
Cream of whatever soups

If I'd had any sour milk last night I'd have used it for Leftover Jojos (recipe posted separately)

Thanks, Mimi. I was under the impression that when one substituted sour milk for sweet in a baking recipe, changes had to be made to the baking soda and/or powder, but i don;t know what those changes would be.

The only reason recipes using a soured/fermented milk product call for baking soda is to make it less acidic. You don't need to add it unless you want to. Many bread bakers, especially sourdough bakers, spend years trying to get a really good sour flavored bread. Baking soda would be the last thing they would add. I have one recipe for a faux sourdough sour bread that uses yogurt and citric acid, but no baking soda.
