spacer Smothered Creole Leeks

On Fri, 14 Jul 2000 Jon A. Egger writes:
Listmates, Was looking at a University of Minnesota map and saw all these buildings or something on the map called "ramps"....19th Street Ramp, University Avenue Ramp, etc. When I spoke with a counselor there on the phone I asked him what the heck a ramp is and it turns out ramp is Minnesotan for what we call a parking garage!

I always thought ramps was something you eat.

Smothered Creole Leeks - Ramps
Printer version of this recipe

(the grocery store variety is not quite so offensive to those that don't care to partake as the wild ones) - look for the wild ones in late spring.

Cut off the green tops and feed to the compost pile.

Cut the bottoms in 1/2 inch slices, season with creole seasoning
or lacking that, salt pepper & a little worchestershire with just enough water to cover.

Cover and simmer until tender and all the water's absorbed.

Mash with 1/2 stick of butter.
Remove from fire, add two eggs, 1/4 cup cream & mix well - serve hot.
