spacer Black Bean Soup

BLACK BEAN SOUP:
Printer version of this recipe

2 lbs cooked black beans
1 cup leeks (onions will do if you can't get fresh leeks)
couplea three or so garlic cloves, minced
1/3 cup oil
1/2 cup water
fresh ground pepper & salt to taste

Saute leeks and garlic in oil until soft
Mash about half the beans in a pot, add leeks, garlic, and everything else left
Simmer till you're ready to eat it.

If you want, you can add some salt pork or country ham.

Some traditions hold you should eat it over rice....if so, rubrics call for white rice only.
