spacer Savoury Cheese Muffins

Well,
It has finally happened. Having become a great and modest baker of muffins (unsure of the US equivalent here but it might cupcakes?) particularly my world-famous-in-my-house savoury cheese ones, the latest batch is a disaster.

Mind you I think I managed to accidentally overheat my muffin tray while empty and it appears to no longer be non-stick:( This could be the crux of the problem so, as I am now out of flour I shall have to get some more and try again tomorrow as a few friends are coming over to 'warm' the home I have now lived in for about 10 weeks. Just in case I will include the recipe, not that it is original or even particularly mine, but hey, we all like reading recipes right?

Savoury Cheese Muffins
Printer version of this recipe

1.5 cups flour
2 tsp. baking powder
1 Tsp. sugar
half tsp. salt
cayenne pepper to taste (I use more than a pinch as I like a muffin with a bite)
2 cups grated cheese
1 egg
1 cup milk

as much of the following as desired:
finely chopped onion
chopped bacon
finely diced celery
sweetcorn kernels (whole as opposed to creamed)
sift and mix flour, b/powder,salt,sugar and cayenne.

Mix in the grated cheese
Mix in optional ingredients
mix together the egg and milk, add to the bowl and fold together, taking care not to overmix
pour into muffin tray, cover with grated cheese and sprinkle lightly with cayenne.
place in oven at 220 centigrade for 12 minutes or until muffins bounce back when touched.

other ingredients may include:
diced sun dried tomatoes
parsley
spring onion
almost anything savoury that doesn't contain too much water
