Salmon Chowder

Modify as needed,

I also think braised/broiled catfish nuggets, shrimp or shark would be interesting. Salmon is a little tender and breaks up more than I like.

1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped yellow bell pepper
1 to 8 garlic cloves, minced, depends on how much you like garlic
1 cup sliced carrots
2 cans chicken broth
2 cups diced peeled potatoes
1 tsp seasoned salt, optional
1/2 to 1 TSP fresh dill weed, minced
1 small zucchini, very thinly sliced, "Important"
1 can cream style corn
1 can (12 ozs ) Whole Evaporated Milk, no diet stuff here
1 16 oz or larger fillet of salmon to make at least 2 cups of grilled/smoked salmon chunks
Cayenne pepper

Cook salmon quickly on medium high heat on grill, best to under cook a little.
Spray saucepan with olive oil, sauté onion,celery bell pepper and garlic for 5 min.
Add potatoes, carrots, seasoned salt, dill and broth.
Cover and simmer for 10 or 15 min or until vegs are just tender.
Add zucchini, corn, milk and salmon that has been sprinkled with a little cayenne pepper and salt.
Sprinkle additional dill on top of chowder when served.
