spacer Roast Potatoes

In honor of the coming together of Pascha amongst us Christians this year, I was remined of the great Easter meals I enjoyed in Greece. This was is the NY Times last week, and I couldn't resist trying it. It works OK.

TRADITIONAL STUFFED LAMB SHOULDER

SERVE WITH: ROAST POTATOES
Printer version of this recipe

3 pounds large oval baking potatoes, peeled and quartered lengthwise
1 cup water
1/2 cup extra virgin olive oil
Juice of 2 lemons, strained
2 teaspoons dried Greek oregano
2 garlic cloves, peeled, crushed and chopped
Salt and freshly ground black pepper.

Preheat oven to 400 degrees. Place potatoes in a large baking pan. Toss with all remaining ingredients. Bake, uncovered, for 1 to 1 1/2 hours, tossing in pan occasionally. Add more water if necessary to keep potatoes from sticking. Remove and serve.

Yield: 6 to 8 servings.
