Cuban Roast Pork
Printer version of this recipe

1. Get yerself a pound or more, two or three is good, of trimmed, boned & rolled pork loin.

2. Slit the meat and push slices of a garlic clove into each cut, cover and rub the whole thing with oregano, lots and lots of coarse ground black pepper and anything else you can think of for roast pork...

3. Marinate the meat overnight (in the fridge, duh!) in the juice of three sour (Seville) oranges, or if you can't get them, limes, including the skin of one (after you juiced it).

4. Remove from marinade, rub with salt and roast in 325 deg. oven for 1 1/2 or 2 hrs (160 deg internal temp).

Now you got Cuban Roast Pork.

Really hungry now....!
