This recipe, which is my family's very favourite breakfast, calls for an apple,
but you can use almost any fruit--strawberries, peaches, apricots, cherries,
even unsulphered dried fruits (but be sure to soak them overnight in spring water
so that they plump up) Choose whatever fruit is inexpensive and in seaon.

The recipe serves 1, but can just as easily be made for 12. This particular
form of muesli is dairy-free but if you prefer to use dairy products you can
use plain low-fat yoghurt in place of soya milk. The grains are soaked overnight
so that enzymes break down the hard-to-digest starches making them much sweeter
and much easier to absorb.

2 tablespoons of oat flakes, or a combination of oat, rye, wheat etc.,
    soaked overnight in a little spring water or fruit juice
A handful of raisins also soaked overnight
1 apple or pear, grated
juice of 1/2 lemon
3 tablespoons soya mild or low-fat yoghurt
1 tablespoon of concentrated apple, pear or strawberry juice
1/2 teaspoon of powdered cinnamon or ginger

Mix together the soaked oat flakes and raisins and combine this mixture with the
grated apple or pear, lemon juice and the soya milk, or low-fat joghurt if you prefer.
Drizzle with fruit juice and sprinkle with cinnamon or ginger. Serve immediately.

For young children or the elderly it is a good idea to blend all the muesli
ingredients together in a food processor. This gives a nourishing and delicious
puree which requires no chewing.
