spacer Raisin Bran Muffins

>Jay wrote: Recipe!! No fair mentioning otheriwise!
Jay, whose cupboard contains several varieties of speculative cereals

Here you go Jay. Sometimes you have to fool around a little with the amount of liquid, depending on kind of cereal used and how wet the fruit additions are. The last two recipes don't use cereal but are family favorites so I included them.

Raisin Bran Muffins (Aunt Ruby Hagen)

Printer version of this recipe

For about 12 - 15 good sized muffins:
Spray muffin tin with Pam.

Combine:
1/2 of 15 ounce box ( 6 cups) raisin bran or bran flakes or Wheaties if you prefer them without raisins
1/2 cup brown sugar
2 1/2 cups flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
3/4 tsp salt
1 tsp cinnamon
optional: 1/4 tsp nutmeg 1/2 cup chopped walnuts or pecans

Combine:
2 beaten eggs or 1/2 cup Egg Beaters or 3 egg whites
2 1/2 C buttermilk
optional: 1 mashed banana or 1 grated apple or 1/2 cup dried sweetened cranberries (Craisins)

Mix liquid into dry ingredients until just combined. Add more buttermilk if needed to moisten.
Fill muffin tins full and even mound it up a bit.
Bake at 400° for about 20 minutes.
