This one's good for parish potlucks. Less boring than most.

Potluck Hamburger Casserole

olive oil
1 cup chopped onion
1 cup chopped green pepper
1-1/2 lb. lean ground beef
1 large can tomatoes
1 cup salsa
1/4-1/3 cup chopped pickled hot red peppers
i can black beans
as much chopped garlic as you think you can get away with
2-3 cups cooked pasta, preferably something interesting
1 cup shredded cheddar (medium is good)

Saute the onions and green pepper in olive oil until soft; turn into mixing bowl. Brown ground beef and strain off any fait. Combine all ingredients, pile into a large greased casserole, and bake for about 40 minutes. (You can either mix the cheese in or sprinkle it on top; I prefer mixed in.) Serves about 8-10.

Come to think of it, you could always leave out the ground beef and add more beans and some corn....
