Remove any discoloured ones. Rinse and cover with cold, salted water. Add the onion (whole) and bunch of herbs. Bring slowly to boiling point. Simmer very slowly until tender, 2 - 2.5 hours. Drain well and rub through a sieve. Add the butter (cut in small pieces), the beaten eggs, pepper and salt. Beat well until the ingredients are well incorporated. Tie tightly in a floured cloth and simmer in water for an hour. Turn out and serve very hot.
