1.5 pt split peas (these are 20 oz Imperial pints, not the 16 oz US measure)
1 small onion
small bunch of herbs
2 0z butter or margarine
2 eggs
salt & pepper

Soak the peas overnight. Remove any discoloured ones. Rinse and cover with cold, salted water. Add the onion (whole) and bunch of herbs. Bring slowly to boiling point. Simmer very slowly until tender, 2 - 2.5 hours. Drain well and rub through a sieve. Add the butter (cut in small pieces), the beaten eggs, pepper and salt. Beat well until the ingredients are well incorporated. Tie tightly in a floured cloth and simmer in water for an hour. Turn out and serve very hot.
