Oatmeal Muffins II

This makes about 1 dozen muffins.

Combine:
1 cup buttermilk
1 cup cooked oatmeal. Steel cut oats give a nice chewey texture.
2 eggs or 1/2 cup Egg Beaters or 3 egg whites
2 T sugar (can use up to 4 T)

Either:
1 orange, chop the flesh and grate the peel
1/2 cup Craisins (dried cranberries) or
1 cup chopped fresh cranberries steeped in 2 T sugar

Or:
1 cup chopped or grated apple

Stir together:
1 cup whole wheat flour
3/4 cup white flour
1 tsp baking powder
1/2 tsp. baking soda
1 tsp salt
1 tsp cinnamon

Stir dry ingredients into the wet ones until well blended.
Spray muffin cups with Pam.
Fill muffin cups full and bake at 400° for 15 to 20 minutes.
