Since several people have asked for this, I'll put it on the list. The directions are very sketchy because mostly it depends on your machine. Follow their directions as to the order of adding ingredients, etc. This is for a 1-1/2 lb loaf. Use two thirds of the recipe for a one-pound loaf or twice that for a two-pound one. Oatmeal Bread 1 cup rolled oats Pour boiling water over oats in a mixing bowl. Stir well and let sit one hour. 1/4 cup luke warm water If there is any problem with the yeast, seek advice from some experienced person among your acquaintance. I get the SAF yeast (I think it's French) from King Arthur Flour. I think they also have bread machine yeast. If you compare this to other recipes, you will note that this one calls for twice as much oatmeal. An excellent oatmeal bread can be made with half the above amount, but this is that much tastier, and oatmeal is very good for you. Barbara D. Colt,From: Barbara D. Colt To: anglican@stsams.org Date: Fri, 20 Aug 2004 Subject: Oatmeal Bread ------------------------------ To convert to a 2 lb recipe divide by 3 and multiply by 4. Or just add the results of the division to the original recipe. In your example the 3 cups of bread flour would become 4 cups, the 1 cup of oats and boiling water would become 1 1/3 cups. SAF is owned by a French company by is made in the US. The same company now owns Red Star yeast. Bread machine yeast is identical to instant yeast. To proof or test yeast, add 1 teaspoon sugar to 1/4 cup warm water (100° to 110°F). Stir in 1 envelope yeast (2 1/4 teaspoons); let stand 10 minutes. If the yeast foams to the 1/2 cup mark, it is active and you may use it in your recipe. (from the Fleishmann's yeast web page). Be aware that most bread machines don't do 1 lb. loaves very well unless they were made just for that size. For that matter most machines don't handle 2 lb loaves very well except for the high end machines such as the Zojirushi. Visit my bread baking web site at:
