I've been making variants on the "classic" cornstarch pudding for about forty years now (if you count "Jell-O Pudding and Pie Filling" which is the same thing, longer than that), and brewing [the] spiced coffee about the same, but I think this variant is sufficiently original to post, maybe. Mocha Orange Cappucino Pudding A pot of Spiced Coffee Into a 4-cup pyrex measure, pour about 2 cups of coffee: add the cup of dry milk, stir, and bring up to the 2+3/4 cup mark with more coffee. At this point you may want to put this into a microwave to heat for 2-4 minutes. In a saucepan, mix the remaining dry ingredients until there are no lumps and the color is even. Add some of the liquid and stir to make a thin smooth paste, put it on the stove on low heat, and continue adding liquid and stirring constantly until all the liquid is mixed in. (The microwave optional step makes this part go faster). Continue stirring constantly, not letting it stick on the bottom, until it is at a very slow boil, and cook for one minute, or a bit more. Remove from heat, still stirring, and stir in the lump of butter (or not), and the vanilla. I leave the butter out, much of the time, because my son-in-love is on a doctor-ordered and pain-enforced very low-fat diet. It is creamier with the butter, and would probably be creamier yet if you used half-and-half or heavy cream as part of the liquid. Without the butter, the texture resembles Jello _Instant_Pudding and Pie Filling more than it does the standard, but it's still pretty good. When the butter is entirely melted and stirred in and the pudding is thick and smooth, pour it into custard cups or other serving dishes. Makes about five custard cups. Serve warm or chilled. You can garnish the top with whipped cream, nuts, or whatever you think is pretty and your family can eat (remember the low-fat part! ;^). A strawberry looks and tastes nice too. If you leave out the butter, there are less than 3 grams fat in the whole five servings, depending on your brand of cocoa.
