spacer Maple Cookies

From: Lynne Callahan
Okay guys, I got a beautiful Kitchen Aid stand alone mixer for Christmas and I can NOT stop cooking (baking actually). I've probably gained 5 lbs since Christmas Day. So, does anyone have favorite bread, cookie, cake recipes to share, so I can continue this odyssey? Love, Lynne
Okay, Lynne, these are really good.

Maple Cookies
Printer version of this recipe

3 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter, softened (no substitutions)
1 cup firmly packed brown sugar
2 large eggs
1/3 cup pure Maple syrup
1 teaspoon vanilla extract

Combine flour, baking powder and salt in medium bowl.
Beat butter with brown sugar in a mixer bowl until light.
Add eggs one at a time, beating until light and fluffy.
Beat in syrup and vanilla.
Gradually add dry ingredients, beating just until blended.
Wrap dough and refrigerate 4 hours or overnight.

Preheat oven to 350 F.
Grease 2 cookie sheets.
Divide dough into quarters.
Between 2 sheets of wax paper, roll one quarter of the dough 1/8 inch thick
(keep remaining dough refrigerated).
Remove top sheet of wax paper.
Cut into desired shapes with cookie cutters.
Bake 8 to 10 minutes, until edges are golden.
Repeat with remaining dough, rerolling scraps.
Decorate as desired.
Makes 6 dozen.

Peace,
Kris
