spacer Leftover Jojos

Last year, following a gathering at my daughters, we had a lot of leftover Jojos (aka Broasted Potatoes). As is they don't reheat well, but I'm too cheap to throw them away, so I tried an experiment that turned out so well that I now occasionally buy them specifically use as leftovers.

Leftover Jojos

1 - 1 1/2 lbs Jojos cut into large bite-size pieces
1 - 1 1/2 cups sour cream thinned with milk to pouring consistency
1 handful of chopped chives

Spread the Jojos in a lasagna pan
Mix the chives with the sour cram and pour over jojos
Zap in a microwave for 5 minutes.

Scrumptious.
