Irish Soda Bread

4 cups flour (can use up to 1 cup whole wheat. Any more than that gets pretty heavy)
1 1/2 tsp salt
3 T sugar
1 tsp baking soda
3/4 cup currants or raisins
2 T caraway seed
2 C buttermilk

Combine all ingredients, turn out on counter and knead 12 - 15 times.
Roll into a ball, place in a greased 8 - 9 inch cake pan and flatten a bit.
Cut a cross into the top. Bake 45 - 50 minutes at 375°.
Cool and slice. Also very good the next day toasted.
