spacer Huevos

Now you've done it, Roy. It's almost lunchtime, I'm hungry and you changed the subject line in such a way that *requires* that I share with everyone the following recipe.

I had it at Mother's in Boulder, over 20 years ago.
Mother, of course, was a big, burly man with a full beard.

Huevos
Printer version of this recipe

Put refried beans on a soft-flour tortilla and put it on the griddle to heat.

Cook the eggs. I always had mine over.
When turned, they got a slice of cheese.

When the cooking is done the assembling begins.

The finished product, from bottom to top is: plate
tortilla
beans
eggs
cheese
alfalfa sprouts
diced onion
diced tomato
diced green pepper (if desired)
salsa
sour cream
guacamole

It's my personal opinion that I'll get to taste this again when I go to glory.
