Ingredients:
1 Fruit bat (1-11/4 lb)
Coconut milk (lots of it)

Shampoo the bat and rinse thoroughly. Do not eviscerate, skin, etc.

Leave intact including head, tail wings and feet.

Fill a large iron pot (8-10 gallons) 2/3 full of coconut milk.

Add bat and simmer several hours until tender.

Turn bat halfway through cooking time.

Serve with lots of rice and other side dishes.

One bat will serve about two Chamorros or 15 haoles.....
