spacer FISH & MACARONI PIE

Well, it's Lent, and it's ice fishing season, so: The following is useful particularly in places where you have to settle for what will hit the hook:

FISH & MACARONI PIE

1 lb or so pickerel or other suspect fish
3/4 cup favorite kind of macaroni/noodles or whatever's in the cupboard...
water
some salt (I use creole seasoning)

Cheese sauce made as follows:
2 tbsp butter
1/4 cup flour
1 1/4 cup milk
1/4 tsp dry mustard
creole seasoning
garlic
3/4 cup grated sharp cheddar

Heat butter in pan & stir in flour.
Cook 2 minutes or so over low heat,
GRADUALLY add milk and seasoings, bring to a boil and cook until thickened. (I've tried this the traditional manly way, where you just dump in all in at once....it doesn't work)
Add grated cheese until melted. Get it hot, but be careful not to let it return to a boil.

At the same time (assuming you have more than one burner on your stove)
Cook the macaroni like it says on the bag.
Simmer fish in a little water with Tony's or Zatarain's Creole seasoning

Put the fish and drained noodles in a pie dish or something similar; top with cheese sauce and put it under broiler until bubbly and just barely starting to brown (not even - just showing color).
