Dumb Food Questions for UK Listsibs - The Thread

1 lb pig's liver
2 medium onions
4 oz fat pork
a pinch of thyme
.5 tsp powdered sage
a pinch of basil
salt & pepper
a pinch of nutmeg
1 egg,
breadcrumbs

My recipe then mentions something I bet you can't get unless you know a friendly farmer who you don't mind thinking you're mad - a pig's caul. This is the membrane that enclosed the foetus.

Slice the liver, onions & pork thinly. Put in a saucepan with the herbs and seasoning and barely cover with water. Simmer for 30 mins then strain off the liquid and save for the gravy. Mince the contents of the stewpan finely. Add the egg and sufficient breadcrumbs to make into a fairly firm mixture and mix thoroughly. Form into balls and enclose each one in a piece of caul. (You may have to hope they hold together without the caul if you can't get it)

Place in a baking tin and add a little gravy. Bake in a fairly hot oven, 400 F, until nicely browned. Serve with a good thickened gravy. Alternatively the mixture can be pressed into a well-greased baking tin and marked into squres. Cover with caul and cut into squares after cooking.
