Do you make your own English muffins? Please, please, please give me the recipe!

English muffins *gluten free*

Regular English Muffins

Combine 1 cup water, 2 tsp sugar, 1/2 cup scalded milk and 1 tsp salt in mixing bowl. Dissolve 1 pkg active dry yeast in 2 TB warm water for 3-5 minutes. Combine these two mixtures.

Sift before measuring - 4 cups all purpose flour.
Beat 2 cups of flour gradually into the above combined mixture. Cover bowl witih cloth and let dough rise in warm place for about 1 1/2 hours or until it collapses back into the bowl.

Beat in 3 TB softened butter. Beat or knead in remaining flour. Grease the inside of muffin rings or whatever you're using and fill half full with the batter. Let them stand in a lightly greased cookie sheet until teh dough has doubled in bulk.

Place the cookie sheet with the muffins in a preheated 425 degree over. Cook till golden brown colour. Cool slightly. Yield: 8 muffins.

Btw, if you increase the milk in the above recipe from 1/2 cup to 2/3 cup, you've got English crumpets.
