ZUCCHINI EGG FU YUNG (serves 4)

4 medium unpeeled zucchini, coarsely grated
3 eggs, beaten
1/4 Cup flour
1/4 teaspoon garlic powder
1 teaspoon salt
1 onion, grated

Mix all ingredients together thoroughly. fry by tablespoonfuls in hot oiled skillet, turning once when edges are golden brown. Serve with the following sauce:

1 Cup chicken broth
2 Tablespoons soy sauce
1 teaspoon cornstarch

Combine in saucepan and stir over medium heat until mixture boils, then quickly lower heat and simmer, stirring, for one minute.

You can also make this into an Italian-style dish by topping with hot marinara sauce and grated Parmesan cheese!
