spacer Duck In Dark Sauce

Whups! Sorry folks, but ya'll are all so talkative I miss alot. (marginally deaf, y'know). At any rate, Malene was wanting a duck, sooooo....DUCK! It's hunting season so I happen to be doing just that:

Rite II - Duck In Dark Sauce:

1 wild duck
1/2 cup cider vinegar
4 tbsp sugar (or molasses)
2 tsp. garlic salt
1 tsp. dry ginger
1/4 cup soya sauce

stuff the duck with an onion and celery (or halve it if'n its fatty) mix seasonings and put em all over the duck and bake uncovered at 350 for an hour, basting appropriately. I've also done it on the rotiserie when I've got the patience to baste it. Turns out crispier.
