. . . it isn't sugar that makes you fat--any jelly would have similar, and you don't eat much of it at once. It's fat that makes you fat--see below: ;^)

DANDELION JELLY
Printer version of this recipe

Use 1 quart blossoms (picked early in the morning without any of the green parts).
Boil blossoms with one quart of water for 3 minutes.
Drain off 3 cups of liquid.

Add:
1 package pectin
4 1/2 cup sugar
1 tsp. lemon or orange extract

Boil about 3 minutes. Tastes like honey.
