spacer Pho (Vietnamese Noodle Soup)

Dear ailing listsibs (or just hungry ones)
Ok, here's a try at the Thai noodle soup recipes. Here is a site that has some good, authentic recipes. The ones I love are the Lemongrass soup and the Thai Chicken Coconut soup. http://www.cs.cmu.edu/~mjw/recipes/ethnic/thai/thai.html

You can also search on 'Pho' to find some Vietnamese versions of about the same things.

The recipes on the web call for some pretty exotic ingredients, at least if you live in rural Virginia. Here's what I really do at home.

Here's a sort of recreation of   Pho,  sort of the national noodle soup of Vietnam, also found in Laos. Printer version of this recipe

I think the broth is often a beef stock but you can use the same chicken broth as before.
Put in a BIG bowl:
Southeast Asian Broth
rice stick noodles, boiled separately and drained

Top with choice of thinly sliced meat. I've had it with beef, chicken or even duck.

Serve with a plate of garnishes:
thinly sliced hot chiles
Fresh Basil leaves or mint leaves
Fresh cilantro
Bean Sprouts (mung)
Cucumber, julienned
lemon or lime wedges
Very thinly sliced onions sprinkled with vinegar

Also have on the table a dish of this sauce or containers of the separate condiments:

1/4 cup fish sauce (nam pla or nuoc mam)
1 cup water
2 tbs lemon/lime juice or vinegar
1/4 tsp sugar
2 tbs minced ginger
1-10 ground hot chiles
2-4 cloves minced garlic (I use 4)
1/4 teaspoon minced fresh cilantro leaf

Every diner adds to his bowl as much of the sauce and garnishes as desired.
