Dear ailing listsibs (or just hungry ones)
Ok, here's a try at the Thai noodle soup recipes. Here is a site that has some good, authentic recipes. The ones I love are the Lemongrass soup and the Thai Chicken Coconut soup. http://www.cs.cmu.edu/~mjw/recipes/ethnic/thai/thai.html

The recipes on the web call for some pretty exotic ingredients, at least if you live in rural Virginia. Here's what I really do at home.

Generic Southeast Asian Broth
Printer version of this recipe

6 cups chicken broth, homemade or canned - reduced salt if I can get it.
Slice of onion
Couple of cloves of crushed garlic
Stems from a bunch of cilantro (not the leaves) OR 1 tsp of coriander seeds
Lemongrass OR several pieces of lemon or lime peel
1 tsp of whole black peppercorns
About 1 inch of fresh ginger root, sliced

Simmer all this together for about 15 minutes, strain the broth and throw away the seasonings. This is now ready for use in many variations on soup. Here are a couple I make.
