spacer Creamed Onions

Well, ya can't get leeks this time of year, so, if you don't want to give 'em red beans & rice:

CREAMED ONIONS:
Printer version of this recipe

Dozen small white onion
Stick of Margarine
8 tsp flour
1/2 lb sharp cheddar, grated
2 cups milk
Salt, pepper, cayenne, etc. to taste
paprika

Bile the onions till fork-tender.
Melt the margarine, add flour and stir till blended.
Remove from heat, stir in milk and return to heat.
Cook, stirring constiantly till thick and smooth.
Add onions, cheese and seasoning.
Serve with paprika.

and then, this one from Fr.Biship Tony: Another great and simple side dish which, I've tried with venison & it really works...
