COLE SLAW

1 apple, Jonathan or Granny Smith or other, optional
1/2 medium green cabbage, sliced very thin (about 4 cups)
1/2 medium red cabbage, halved lengthwise and sliced very thin (about 4 cups) OR 1 med green cabbage instead of both the above
2 carrots, shredded

Dressing
1/2 cup mayonnaise
1 tablespoon honey or sugar
2 teaspoons cider vinegar
1/2 teaspoon salt

In a large bowl, whisk together dressing ingredients.

Some poppy seed is nice in the dressing.

Shred apple coarse and add to dressing with cabbage and carrots.
Toss cole slaw well. Do not serve immediately unless it's necessary.

Cole slaw is a great recipe to mess around with--all kinds of substitutions and additions you can do for interesting flavors--brown sugar instead of the honey or sugar makes it a bit different yet, or shred a green or sweet red pepper to add. The only things really necessary are the cabbage and something to moisten it.

Serves 8.
