Shred apple coarse and add to dressing with cabbage and carrots. Cole slaw is a great recipe to mess around with--all kinds of substitutions and additions you can do for interesting flavors--brown sugar instead of the honey or sugar makes it a bit different yet, or shred a green or sweet red pepper to add.
