spacer Chocolate Zucchini Bread

Hi, everyjones,
Wyn and Kris and Mimi (and maybe others) wanted a zucchini bread recipe.
Okay, but this is not a diet bread. Maybe that's why kids like it. ;>)

Secret Zucchini Bread Ricipe
Printer version of this recipe

1 3/4 cups sifted all-purpose flour
2 1/4 teaspoons double-acting baking powder
1/2 teaspoon salt
3 tablespoons dutch-processed cocoa, preferably Ghirardelli ;>)
1 teaspoon cinnamon
1/2 cup unsalted butter, softened
1 cup sugar
2 eggs
1 cup whole milk vanilla yoghurt, preferably Brown Cow, with cream on top ;>)
1 1/2 cups finely grated zucchini

Cream the butter and sugar together until light and fluffy.
Beat the eggs in, one at a time. Stir in the yoghurt and grated zucchini.
Mix all of the dry ingredients together and fold them in, lightly, as you would with cake batter.
Pour into a greased bread pan and bake at 350 degrees fahrenheit for about 1 hour, or until done.
Cool before slicing thinly.

You can either use 1 large bread pan and bake for the full time, or two smaller loaf pans and bake for about 35 minutes.

I like to use the smaller ones, because you get nice little pound cake-like slices of the bread. With all of the chocolate, you don't really see any green in this, so you don't have to tell people that it contains zucchini. It's just like any other sweet quick bread, made with pumpkin, bananas, apricots, etc.
