Chocolate Pudding

In top of double boiler melt
   1 oz. unsweetened baking chocolate or 3 Tbsp. cocoa
Stir in and heat to scalding point
   1/2 cup sugar (4 oz.)
   pinch salt
   1-3/4 cup whole milk
Mix
   3 Tbsp. cornstarch
   1/4 cup whole milk
Stir cornstarch mixture into hot milk mixture.
Cook over boiling water, stirring constantly until thickened.
Cover and cook over simmering water for about 10 more minutes.
Remove from over water and cool by stirring and adding
   1 tsp. vanilla
Pour into 4 sherbet dishes.
Serve with heavy cream.

For UK 20 fl. oz. pint, increase cornstarch to 3-1/2 Tbsp. and chocolate to 1-1/2 oz, or use 5 Tbsp. cocoa.

Addendum:
I forgot one thing - in UK, cornstarch is called corn flour. It is the major ingredient in Birds custard powder (original, not instant).
