Chicken Salad In a Coffeemaker

2 boneless skinless chicken breasts (each cut in half)
1/4 cup cashews, chopped
2 tablespoons mayonnaise
2 slices bread, optional
1/2 head Boston lettuce, optional
1 medium tomato, cored and cut into wedges, optional Salt and pepper to taste

Place 1/2 chicken breast in coffee filter.
Run 12 cups of water through filter.
Repeat process with a new filter for each 1/2 chicken breast.
While chicken is cooking, chop cashews and place in bowl.
Shred or dice cooked chicken.
Add chicken and mayonnaise to bowl and mix well.
Season with salt and pepper.
Can be served on a bed of Boston lettuce surrounded by tomato wedges or on bread as a sandwich.
