9" springform pan

Six large eggs, boiled
1/4 c. mayonnaise
1 tbsp prepared mustard
1 envelope gelatin, dissolved in very small amount of hot water
1 medium onion, minced
8 oz brick cream cheese, very soft
1 jar Charles's favorite cheap caviar

Chop eggs. Mix gelatin with mustard, stir into eggs with mayonnaise. Press into springform pan. Sprinkle onions on top of eggs. Top onions with cream cheese and spread cream cheese making a smooth surface. Gently spoon caviar over cream cheese until the top is covered. Refrigerate several hours, maybe overnight. Serve with unsalted crackers.

If you're feeling particularly festive, buy three jars of the different colors of cheap caviar (red, gold and black) and make fancy designs on top.

Very popular on New Year's Eve.
