Here are 2 recipes Malene, the first is ok, the second makes a delightful, moist cake that stays moist until it's finished. If it gets the chanch that is <g>

Carrot Cake 1

Carrot Cake 2 (the better one in my view)
Printer version of this recipe

1 cup wholemeal flour
1 cup flour
1/4 tsp salt
2 tsp cinnamon
2 cups raw sugar
1 cup oil
4 eggs
3 cups grated carrots

mix dry ingredients (no sifting) add oil and stir in beaten eggs mix in carrots

cook in a 10 inch tin for 1 hour at 350

Icing for either cake

4 oz cream cheese
2 oz butter
2 cups icing sugar
1 tsp vanilla essence
chopped nuts walnuts or pecans

mix icing ingredients togehter until smooth, add nuts, apply
