Paul, Here's my favorite -- a thin, vinegary sauce that's wonderful on pork. Let me cast my vote now with Tom. Carolina style barbequed pork is the BEST!

Carolina Style Barbecue Sauce

1/2 cup onion
2 garlic cloves
Jalapeno or other hot peppers (up to you how much)
Add:
1/2 cup cider vinegar
2 T lemon juice
1 T worcestershire sauce
2 t sugar
1 tsp ground celery seed or celery salt
1/2 tsp allspice
1/2 tsp ground coriander seed ( this gives another lemony taste.
   (You probably wouldn't miss it too much if you left it out)
cayenne or tabasco if you want it hotter

Here's a whole different animal. I like it on chicken.
