Paul, Here's my favorite -- a thin, vinegary sauce that's wonderful on pork. Let me cast my vote now with Tom. Carolina style barbequed pork is the BEST!

Here's a whole different animal. I like it on chicken.

Jerk Sauce
Caribbean Barbecue Dipping Sauce

Saute:
1 chopped onion
1T oil
2 cloves garlic

Add:
2 peeled and chopped mangoes (I've made this without the mango)
   I would be tempted to try substituting fresh peaches
1 inch square of tamarind paste (no substitute.
   Can get it at an oriental market)
   If you leave out the mangoes, use more like 3 T of tamarind paste.

1/2 cup cider vinegar
juice of 1 lime
2 chipotle peppers, soaked and chopped
1/2 cup brown sugar
1/4 cup molasses
1/2 cup raisins
2 tsp allspice
1 tsp nutmeg
1 tsp coriander
1 tsp cinnamon
1/2 tsp thyme
1 tsp salt
ground black pepper
hot peppers or pepper sauce to taste

Simmer this for an hour, then puree. Thin with water if necessary to make it a sauce.
