spacer Sweet Broccoli Salad

I had this first at the St. Francis, Fortuna 50th Anneversary celebration.
After several small experimental batches I made it for The Swede's Radio Club Party last week. It got rave reviews.

Sweet Broccoli Salad

Just 3 Ingredients in the salad:
Broccoli flowerets (blanched) - Nuts - Dried fruit

And 3 Ingredients in the dressing:
Mayo - Sugar (or subsitute) - Rice Vinegar

Dressing first:

1/2 cup Mayonaise
1/2 cup Sugar (I subsituted 12* packets of Splenda)
2/3 cup Rice Vinegar
I doubled this but had a lot left over.

*24 packets = the sweetness of 1 cup of Sugar according to the Splenda website.

The salad:

The caterers version used:
Broccoli flowerets
Walnut halves
Dried Cherries

My version:
Broccoli flowerets - 4 fairly large crowns gave me about 8 cups of flowerets.
Nuts - I used about a cup of salted cashews.
Dried fruit - I couldn't find dried cherries locally so I used about a cup of Craisins (Dried Cranberries).
  Since they seemed drier than cherries,
  I drowned them in some of the dressing the night before.
